Sweet potato sandwich recipe

file1.pngWhen I was in school, there was a small cafe that was on campus made used to make these wonderful Yummy sandwiches that I ate at least twice if not more. They'd fresh cilantro pressed into a chewy baguette, tangy feta and bright orange yams -the ideal blend to fulfill my creative hungry soul and recharge my energy for what would really be a millionth allnighter. Over time I have th century Avant Gardists than I have about the sweet, crunchy, chewy and vibrant, herbal combination of this sammy. I came up with my own variation using goat cheese, sweet potato, baguette, sambal and cilantro -adding some spice as well as several bits of difference. Sweet potatoes are available all year long and so are packed with Vitamin C A and Beta Carotene. By omitting the cheese this vegetarian sandwich can be made into a vegan meal. It is simple, nutritious, appetizing and soul-satisfying. What more would you require?

Items Required:
2 moderate-sized sweet potatoes, sliced lengthwise
2 tbsps olive oil
1 tbsp honey
lemon juice
cayenne pepper
salt, pepper and red chile flakes
Sambal
4 tablespoons goat cheese
10 cilantro leaves per sandwich
Soft baguette cut into 6 inch lengths and halved

Directions on how to make them:
Preheat the oven with over 400 degrees.Slice the sweet potatoes lengthwise in thick pieces, skin on. Place on a baking sheet (I line mine with a Silpat or silicone baking sheet). In a little bowl, combine honey, olive oil, lemon juice, salt, pepper, cayenne and crushed red pepper. Coat the potatoes completely and place the baking sheet in the oven. Roast for about 20 minutes turning one time , until fork tender.
Slit your baguette lengthwise; brush each half with olive oil (if there is remaining 'sauce' from the potato marinade you can even use this). I warm the bread in a toaster oven until the edges give way. Use your personal strategy to toast the baguette whether in the oven, underneath the broiler or on a grill. When they are ended take out the potatoes. Set 3-4 pieces on the bottom half of the baguette. Add cheese on top of potatoes, pile cilantro together with the warm, melting cheese. Add Sambal in case you prefer and put the top back on, slice in half.
