Lemon Pepper Shrimp and Spinach Bowls
Wondering how to cook shrimp for dinner tonight in less than 30 minutes? This quick shrimp bowl starts with frozen lemon pepper shrimp, making it just about the most delicious meal you’ve ever cooked before anyone can ask, “what’s for dinner?”
Ingredients
1 10.5oz package frozen SeaPak® Lemon Pepper Shrimp
1 cup uncooked long-grain white rice
2 tbsps olive oil, divided
Kosher or flake sea salt
¼ cup chopped parsley (reserve some for garnish)
Zest of ½ lemon (optional)
½ onion, finely diced
3 cups fresh baby spinach
Directions
- Cook the rice. Bring 2 cups water and ½ tsp salt to a boil in a medium saucepan over high heat. Stir in the rice and 1 tbsp of the olive oil and boil for one minute. Reduce the heat to low, cover the pan, and simmer the rice for 18 minutes. Remove from the heat and fluff with a fork.
- While the rice cooks, sauté the onions in the remaining olive oil in a medium sauté pan. Stir in spinach, lemon zest, and parsley, and cook until the leaves begin to wilt. Remove from heat and place in a bowl to the side.
- Cook the lemon pepper shrimp according to package instructions in the same saute pan you used for the spinach and onions.
- To serve, divide the cooked rice between 2 bowls. Top each with spinach and shrimp. Garnish with reserved parsley.
Broccoli, Parmesan, and Shrimp Pasta
Fresh green broccoli and juicy butterfly shrimp make this quick and simple pasta a surefire favorite.
Ingredients
2 packs frozen SeaPak® Butterfly Shrimp, jumbo, breaded, or regular
1 pound penne pasta
4 tbsp butter
3 cloves minced garlic
1 cup chicken or vegetable broth
2 lemons, juiced and zested
1 bundle fresh broccoli, cut into florets
1⁄2 cup Parmesan cheese
Salt and pepper to taste
Directions
- Cook shrimp according to package directions and keep warm.
- Cook pasta; drain and cover.
- Meanwhile, in a large saucepan with lid, melt butter and heat over medium-low heat.
- Add garlic and sauté for 1 minute.
- Add the broth and lemon juice/zest along with salt and pepper to taste.
- Add the broccoli, cover, and cook until the broccoli is crisp but still tender, about 4 minutes.
- Toss the cooked broccoli and sauce with the cooked pasta
Serve immediately topped with freshly grated cheese and cooked shrimp.
