Once you encrypt a database, you are not able to decrypt it unless you have the correct keys, and guessing the appropriate keys can take time. Handling encryption keys need the same effort as managing other preventative controls in the online world, like access control lists. Somebody needs to review regularly who has access to what information and revoke access for people who no longer need it.
