Ingredients in Nidia's Roasted Portobelo Tower Salad for Two!

4 Medium Sized Portobelo Mushrooms

2 Red Tomatoes in 1/4" Slices

4 Goat Cheese 1/4" Slices

(cut with plain floss)

Balsamic Vinaigrette Recipe for Tower Salad (below)

1 Bunch of Basil Leaves

1 Pack of Edible Flowers

1 Red Lettuce & 1 Watercress

Have ready a few sprigs of watercress, basil leaves, red lettuce leaves torn into large size pieces and the slices of goat cheese.

Clean the portobelo mushrooms, remove the black fins, brush with olive oil, salt, pepper and then roast in the oven for about 15-20 minutes at 330 degrees F, or until soft to touch.

Now start to build a base of Watercress, basil leaves and torn red lettuce pieces in the center of each plate!

Use the goat cheese and tomato slices in combination to divide each layer as you build the tower salad upward!

Finish the top layer with basil leaves and portobelo mushrooms!

Drizzle some of the balsamic vinaigrette recipe lightly around the base of the tower salad on each plate and finish off with a sprinkling of edible flowers for decoration!
